Chocolate Truffles
5 ounces 65% cacao chocolate 4 ounces heavy cream, boiling 1/2 ounce brandy pinch salt 1. Bring cream just to a simmer. Mix chocolate and salt in small bowl. 2. Slowly add to chocolate, stirring from center until completely incorporated then add brandy. 3. Roll into balls about 1 tablespoon each. 4. To finish; coat in chocolate or roll in cocoa powder. |
